Udon Noodles Rice
Did I eat enough today?
before the gym I ate a banana. for breakfast I had rice, miso soup, and an egg (my horrible attempt at having a Japanese breakfast). at lunch time I had a couple of bites of this nasty greasy “Japanese food” from a food court: noodles and vegetables. and a cup of green tea. I went home and ate a bowl of udon noodles. throughout the evening I’ve been drinking V8 splash and eating almonds. I’ve also been drinking water throughout the day.
the reason I don’t have any meat or dairy in my diet is because I’ve been a vegetarian for almost three years, and trying to transition over to veganism. once my mom and I get a chance to go to the grocery store I plan on getting more protein and calcium rich veggies such as spinach and broccoli.
No one else can really tell you if you ate enough today. Not a doctor, not your mother, and definitely not any random Yahoo! Answers user. The only person who can give you the answer is you. 
Your body will tell you when it’s hungry and when it’s not. It’s just built that way! One of the miracles of life is how our bodies take care of themselves/let us know what they need to be healthy. It’s very good of you to want to go vegan, and even better that you’ve been a vegetarian for almost three years! You must have a lot of will power and self control, which are both very admirable qualities. 
Just listen to your body. If your stomach is growling then you should probably eat. If your stomach is grumbling a lot (or hurting, rejecting contents, etc.) then chances are you’re not eating enough. Just pay attention and you’ll be fine. (But be careful to get enough vitamins, protein, and all of that good stuff. These will keep you healthy!)
