Good easy Udon noodle broth recipe?

I have recently gone to a restaurant called Mindado. When i went there i tried there udon noodle soup and fell in love with it. Now i have been searching the internet for a good and easy way to make a udon noodle soup broth. I dont want to have to go to any special store, i just wanna go to like stop and shop or a store to that sort.

Udon Noodle Soup with Shiitakes
Servings: 4

2 tablespoons toasted sesame oil
2 green onions, cleaned and finely chopped white and green parts
1 clove garlic, minced
1 tablespoon peeled ginger, finely chopped
1 generous cup thinly sliced shiitake mushrooms
6 cups vegetable broth
1 tablespoon rice wine vinegar
1 carrot, cut into a small dice
8 ounces cooked udon noodles

Directions

In a medium wok or skillet (with deep, angled sides) coated with Teflon non-stick, heat the oil over medium until hot. Add the onion and stir with a wooden spoon to coat the onions. Cook about 1 minute and then add the garlic. Stir in the ginger and the mushrooms, and saute about 4 minutes or until mushrooms are tender.

Add the broth and the vinegar, and stir well. Add the carrot and cook for about 8 minutes. Portion the cooked noodles into individual serving bowls and add the soup broth slowly with the vegetables, not making the result too soupy. Serve immediately.
