Soba Noodles Udon

Flavour for Japanese/Asian style vegetable noodles?
I have some two types of Asian style noodles – udon and soba and I want to make a vegetable noodle dish with one of them (or a combination??). What ingredients can I use to flavour my dish? I prefer basic ingredients as opposed to ready-made sauces etc that come in a packet. I also prefer ingredients which are easy to find in a regular supermarket, as I’m not able to go to an Asian grocer.
I love the simple combo of sesame oil, soy sauce (low sodium is available) & a touch of honey. Top with scallions & sesame seeds. Very yummy! Another favorite is hoisin sauce (sweet & spicy).
There’s also teriyaki, ginger, sweet & sour, peanut sauces, etc, etc. Check out the Asian food isle in your grocery store for tons of ideas. & if you’d rather make your own just note it’s ingredients & have at it!
